Low-carb cupcakes with peanut butter frosting and caramelized pecans
Ingredients:

• ¾ cup almond flour
• 5 tablespoons of chopped walnuts
• 3 eggs
• 4 tablespoons of Greek yogurt
• 1 teaspoon vanilla extract
• ½ cup powdered sweetener (erythritol or xylitol)
• 1 tablespoon of baking powder
Preparation:

In a bowl, mix the dry ingredients: almond flour, chopped walnuts, and powdered sweetener. Add the eggs, yogurt, and vanilla extract and mix well. Then, add the baking powder and stir until smooth. Place cupcake cases into metal molds and divide the batter between them, filling them a little more than halfway. Finally, place them in a preheated oven at 200°C for 25 minutes.

Ingredients:

• 80g of traditional spreadable cheese
• ½ cup of peanut butter with caramelized pecans
• 2 tablespoons of coconut oil
• 2 tablespoons of powdered sweetener (erythritol or xylitol)

Preparation:

Beat all ingredients with an electric mixer or hand mixer and use the mixture as a frosting for the cupcakes.
